Zambrero UK opens 17th restaurant as national franchise expansion gathers pace

Zambrero, the modern Mexican restaurant group, has announced the opening of its 17th UK restaurant in Brackmills, Northampton, led by first time hospitality Franchise Partner Caleb Slater, in the latest development in the brand's ambitious UK franchise growth strategy.

The new restaurant, located in one of Northampton’s busiest business and retail districts, will serve Zambrero's fresh modern Mexican menu of burritos, bowls, tacos, nachos and quesadillas to thousands of local workers, residents and delivery customers.

The latest opening, the first for the brand in Northamptonshire, strengthens Zambrero's presence in the Midlands and demonstrates the brand's commitment to attracting the next generation of franchise entrepreneurs as it works towards its initial goal of opening 100 UK restaurants by 2030.

At the heart of Zambrero is its hugely successful Plate 4 Plate humanitarian initiative. Every time a burrito or bowl is purchased at any of its restaurants, Zambrero sends a nutritious meal to someone in need in the developing world via its charity partner, Rise Against Hunger℠. The combination of delicious, freshly prepared food and giving back is why Zambrero call themselves Feel Good Mex.

Slater is one of the UK's youngest franchise partners in the hospitality sector having recently turned 20-years of age and is new to the hospitality industry, showcasing how the robust training and support plans at the heart of Zambrero’s franchising model, allow a huge range of entrepreneurs to join the team. Alongside opening Zambrero Brackmills, Caleb is the founder of Cards2Cash, the UK's leading online gift card marketplace.

The Brackmills restaurant has created 10 full and part-time jobs, while giving local consumers access to Zambrero's freshly prepared modern Mexican food for dine-in, takeaway, catering opportunities and delivery.

The opening follows a period of significant momentum for Zambrero UK, which has been rapidly expanding its franchise recruitment programme through its network of regional Development Agents. Since launching its UK franchise growth strategy in July 2025, the business has continued to grow its footprint across London, Birmingham, Manchester, Reading, Essex, Glasgow, Basingstoke and now Northampton, as it builds towards becoming one of the UK's fastest-growing QSR franchise brands.

Globally, Zambrero has more than 350 restaurants in Australia, Ireland, New Zealand, the USA, and the UK, and is the largest Mexican restaurant franchise in both Australia, New Zealand and Ireland.  It is aiming to open an initial 100 restaurants in the UK by 2030 in a growth drive through its franchise programme.
