Exclusive Interview with Sunny Rahim, Franchisee, The Sushi Co

Sunny Rahim is The Sushi Co franchisee for Waterloo, Victoria, Notting Hill and Holborn.  Previously an operations manager at Papa Johns for one of The Sushi Co’s co-founders Raheel Choudhary, Sunny relished the chance to become involved in a new innovative brand when the opportunity became available.

Sunny explains:  “Since becoming a franchisee with The Sushi Co, it’s been a whirlwind!  In just a couple of years the company has grown to more than 20 branches so we must be doing something right!  I am a co investor with Raheel for four restaurants and I plan to open another 2-3 by the end of 2025.

“In short, our live sushi kitchens have gone towards creating a brilliant brand which has real customer appeal.  The management team are some of the most experienced operators in the QSR industry and they have set up and refined the business model for optimal success.  At first it was operationally challenging dealing with multiple suppliers, however, the team quickly worked to reduce this to just a couple, which means ordering is now very straightforward.  As a franchisee, I can now focus on delivering great fresh, healthy sushi to customers ensuring the best experience possible.

“The training to become a franchisee was comprehensive.  I was already a chef, so I knew the basics but in a month I learned how to manage stores too.  My role is now fully operational, overseeing staff management, labour and food costs, adherence to standards and policies and local marketing, while head office take care of national marketing and the website.

“Our restaurants have an average of 24 seats which just works.  Customers can either dine-in or order a take away and we also deliver.  We employ between 8-10 people in each restaurant and everyone is focused on delivering premium quality food for our customers.

“As we’ve grown so has our menu and as well as sushi, customers can now also enjoy our East Asian inspired dishes to cater for any occasion or craving.

“Since opening our first site in Victoria, we have more than tripled the turnover for that store, due to repeat business and a growing reputation for our delicious food.  The product really is first class and the quality we serve up in our live sushi kitchens always goes down well.

“I’m a relative newcomer to sushi but I really love the fresh, flavoursome choices.  My personal favourite is Ebi Panko Kaburi which is fried ebi prawn wrapped in nori seaweed, rolled in rice and topped with avocado, fried noodles and tobiko, served with ginger, wasabi, spicy mayo and a sweet and salty unagi sauce.  What’s not to like?

“Customers also appreciate the health benefits of our fresh fish and sushi and we see this as a real growth market.  I would certainly recommend the franchise opportunity to others looking to invest, as the business model is excellent and the management team are very experienced and supportive, working with franchisees to help them grow.”
